What’s the best part about campfires? S’mores, of course. Gooey marshmallow and melted chocolate between two crispy graham crackers enjoyed by firelight. Yum!

Now, what if we told you you could have s’mores for breakfast? We mixed the campfire favorite with one of our most-loved breakfast staples to form one deliciously sweet stack of pancakes. You can only get these special ‘cakes from Bessie’s Diner every so often, but we’re giving you the recipe so you can make them at home to curb your cravings.

Pancake recipe:

  • 1 1/2 cups all-purpose flour

  • 3 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 1/4 cups milk

  • 1 egg

  • 3 tablespoons butter, melted

  • Mini marshmallows

  • Chocolate chips

  • Graham cracker crumbs

  • Marshmallow sauce: 1 tablespoon butter and marshmallow fluff

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides.

For marshmallow sauce: Melt 1 tablespoon of butter with marshmallow fluff in a pan for 1 minute (until gooey).

Plate pancakes and top with marshmallow sauce, marshmallows, chocolate chips and graham cracker crumbs. Serve and enjoy!
